Poultry women raise chickens for eggs and meat, and only a century earlier, the conditions were far more favorable for the hens under their care. Instead of a life limited to a cramped cage in modern windowless eggatoriums, the hens of old roamed the sunny dirt of the poultry farm, free to breathe clean air. Their days were filled with scratching for grubs, building secret nests, and sometimes even managing to roost on the low limbs of an apple tree despite their clipped wings.
